The 2016 Pipe Down is a blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Wild and commercial yeasts were used to ferment the grapes, and 20% of the French oak barrels were new with the remainder being neutral. The wine was blended in the spring, and then went back into barrel until late August when it was bottled. The nose is a heady mix of cassis, plum, blackberry and sweet oak spice. The palate is very smooth for such a young red wine, and there is a lovely balance between fruit, oak, tannin, and acidity. While offering plenty of lovely fruit-forwardness in its youth, this wine will age gracefully for the next decade.
