2016 Pinot Gris

The 2016 Pinot Gris underwent eight hours of skin contact in the press to gently extract colour and aromatics from the skin of the grapes, giving it a lovely pale salmon hue. The settled juice was then fermented in a mixture of French oak barriques and stainless steel tanks using four different yeast strains to gain complexity. The enticing aromatics of spiced Bosc pear, apricot and honeysuckle jump from the glass and follow through on the palate, along with flavours of nectarine and Meyer lemon. The palate shows richness and weight, which is nicely balanced by refreshing acidity.
